White Chocolate Chip Raspberry Muffins

Muffins have become a staple in our household, we love making them for friends and outings. This recipe is a particular favorite of ours, combining our love of chocolate with the fresh berry kick that makes these muffins extra special. We hope you enjoy them as much as we do.

Ingredients: (makes 12 muffins)Wet ingredients,

- 1 cup of soy milk

- 2 tablespoons of apple cider vinegar

- 1 flax egg (1 table spoon ground flax seed, 3 tablespoons water)

- 3/4 cup of coconut sugar

- 1/3 cup coconut oil

- 2 teaspoons of vanilla extract

Dry ingredients,

- 2 cups plain flour

- 2 and a 1/2 tea spoons of baking powder

- 1/4 teaspoon baking soda

- 1/4 teaspoon of salt

- zest of 2 lemons (optional)

and 1 cup of frozen berries and 1 cup of chopped vegan white chocolate


- 1 table spoon

- 1 tea spoon

- measuring cups

- 2 bowls

- muffin tray

- parchment paper

- 1 zester or grater


1. First pre-heat your oven to 170 degrees celcius and make your flax egg, allow it to sit for 15 minutes.

2. Mix the soy milk and apple cider vinegar and set aside to thicken

3. Sift your dry ingredients into a large bowl

4. In a separate bowl whisk the soy milk and vinegar combination with flax egg, sugar and the rest of the wet ingredients until well combined

5. Gently fold the wet ingredients into the dry but be careful not to overmix

6. Fold in the raspberries and chocolate

7. Line your muffin tray with parchment paper and fill the muffin trays to approximately 3/4 full each

8. Bake for 35 minutes or until golden

9. Enjoy
