Spiced Apple Tea Cake
This Vegan take on the traditional apple cake is so full of flavour and will have you and your friends thinking of autumn no matter what the season. If you are like us and you love that time of year this is a must make recipe, simple, tasty and light.

Ingredients:
2 table spoons of chia seeds
2/3 cup of melted coconut oil + extra for greasing
1 & 1/2 cups of plain wholemeal flour
2 tea spoons baking powder
1 tea spoon ground cinnamon
1 & 1/2 tea spoons of ground ginger
1 cup of coconut sugar
1/4 cup of almond milk
Apple topping ingredients
1 cup of coconut sugar
grated zest and juice of 1 organic lemon
1 tea spoon of ground cinnamon
2 eating apples peeled cored and thinly sliced
Equipment:
measuring cups
table spoon
tea spoon
mixing bowl
cake tin
sharp knife
zester or grater
saucepan
Instructions:
1. Put the chia seeds in a small bowl and add 4 tablespoons of water, leave to soak for 10 minutes
2. Pre-heat the oven to 180 degrees celcius
3. To make the apple topping pour 3 cups of water into a small saucepan over medium heat, add the sugar, lemon zest and juice and cinnamon, stir and bring to a gentle boil and add in the apple slices, cook this for 10 minutes until the apples are temder
4. Take the apples out and leave to cool, discarding the liquid
5. Meanwhile sift the flour, baking powder, ginger and cinnamon in a large mixing bowl and stir in the sugar.
6. Pour the melted oil into the bowl along with the chia seed gel from step 1
7. Add 4 tablespoons of water and the milk
8. Mix together well and then tip the batter into a prepared cake tin and level the top
9. Lay the apple slices on the top, starting at the outside and working into the centre.
10. Bake for 40-45 minutes or until golden
