Pumpkin Soup

Our pumpkin soup recipe brings warmth and a seasonal feeling to the diner table. Rich and thick it is perfect for warming up on cool autumn days and evenings. Plus its healthy and easy to make.

Ingredients: (serves 2-3)

- 1 medium sized pumpkin

- 1 large onion

- smoked paprika

- vegetable stock

- soya milk (optional)

- pumpkin seeds


- handheld mixer

- pan

- pot

- oven

- sharp knife

- measuring cups


1. Pre-heat your oven to 180 degrees celcius

2. Roast pumpkin for around 40 minutes or until cooked

3. Meanwhile saute your onion and prepare 1 cup of stock

4. Take the pumpkin out of the oven and remove the skin and seeds until only the 'meat' remains and place it in a pot with the stock and onion.

5. Using a handheld mixer blend until smooth

6. Add a little soya milk depending on your preference, mix and serve

7. Add some smoked paprika and pumpkin seeds to garnish
